The Difference Between Fish Gelatine with Other Gelatine

In terms of production, fish gelatine has a much lower melting temperature than beef or pork gelatine which melts at 75 to 80 degrees Celsius. Fish gelatine has properties such as lower viscosity and different texture compared to mammalian gelatin.
